- Annotation: The review highlights a rich layer of ethnodialect vocabulary of Kostroma Region, related to local food names in samples of folkish speech. It is noted that the author of the book pays special attention to the following categories – baked goods, hot and cold (first) dishes, second courses, drinks, berries and fruits, mushrooms, vegetables, wild herbs, game, fish, dairy products. Special attention is paid to the reliability of dialect records (text certification). It is indicated that their source is field records and documents of various types. Since food occupies one of the most important places in everyday life, it is presented primarily as a cultural tradition. At the same time, the vocabulary of Kostroma rustic cuisine provides valuable information about the complex dialectal features of the region as a reflection of the phenomena of a nationwide Russian character. In addition, the author talks about food as a process in time and space: she notes the ordinary, ritual, festive and timeless. Nina Gantsovskaya examines the parts and ingredients of food, talks about the cooking environment, utensils and serving. A valuable addition to the work is the Appendix, which contains the “Dictionary of folk nutrition of rural residents of Kostroma Region”, the section “Kostroma nutrition and social dialects (argot)”, “Dialect Kostroma texts. Dishes of folkish cuisine and recipes for them”, as well as a “Short dictionary of texts”. The book by Nina Gantsovskaya will be useful to philologists, historians, local historians, researchers of folkish culture and food industry specialists in order to preserve and recreate rustic cooking traditions and enriching the Russian cultural vocabulary.
